    Here's an easy way it's done in commercial kitchens.

    When you remove the pan from the stove top filled with
    freshly boiled Eggs, drain the hot water. Run cold water
    over the eggs to stop the continued cooking of them and to
    cool them down enough to handle. When the Eggs are cool,
    keep the pan or sink or large bowl filled with cool water.
    Do your peeling underwater. Crack the shell on the side of
    the pan or bowl. Here's the trick! Gently roll the Egg
    between the palm of your hand and the side of the bowl,
    beginning in the cracked area of the shell. Don't press too
    hard or the Egg inside the shell will split. Roll all the
    way around the egg, till the shell is shattered. The more
    you do them, the quicker you become. Then, keeping the Egg
    underwater, peel the shell off.

    You'll find it a lot easier than doing it on a paper towel
    or cutting board on your counter top. The small fragments of
    remaining shells that usually cling to the egg just slip off
    in the water.
