People actually fight the idea of having Nutrition and Ingredient info on
menus. Asking the restaurant to do something special, which the staff does
not understand, is to risk having them spit on your food, or worse.
I am concerned about partially hydrogenated oils in the cooking. Also, many
omelets may have flour in them.
Yesterday, I ate brunch at a Marie Calendars restaurant in California. They
had a sign in the back of the waiting area that warned that chemical
carcinogens may be in the food. I wish they would be more specific about
what they are including. Just cooking food can create some carcinogens.
Maybe they ARE using some strange chemicals. Who knows?
The only safe thing to do is not eat in restaurants.
Polyunsaturated vegetable oils are a concern. If you read the Paleo info on
them, it is serious. However, if I recall correctly, conjugated
polyunsaturated oils, from animals, are beneficial.
You are part of a tiny minority. It may be best to eat at home, or take a
bag lunch.

I think we as consumers pay a lot of money for food in restaurants,
and if our health is at stake, we should not have to settle for food
cooked in vegetable oil.
