    I called HEB and got advice from the meat dept.
    That is where I bought it.

    It's in at 350 for 4 hours, then will be checked.
    2 hours and 47 minutes to go.

    Looks good so far.
    I just took the carrots out and put in a colander of Broccoli. I'll take
    that out and put the mushrooms in to roast for the final hour.

    Other than Turkeys, I've never roasted a hunk of meat this large before.

    A joint is really just a lump of meat as opposed to bits cut off such as
    chops, steaks etc.

    I think the forequarter has much more flavour than other parts.
