Dubious comfort food

  1. David and I have been trying out the little 'no-name' mexican places near my
    house. They're a bit sketchy at times but when the food is good the food is
    GOOD.

    Last week he surprised me with a burrito from one of them. It was a tasty
    barbacoa burrito that I wolfed down. Sadly, at 2am I was ripped from sleep
    with a painfully rolling belly. Spent the next many hours losing all of the
    meals from the past year or so.

    Throughout the week I've been okay but still had rolling belly. I did the only
    logical thing and ate Ethiopian, Thai and South Indian food. Don't know if it
    was the smartest move, but in my defense, I got tom kha from the thai place
    and that's my idea of comfort food.

    Anybody have a tried and true tom kha recipe?

    I don't know if this is authentic, but it's very tasty.

    3 cups chicken broth
    1 x 14 oz. can coconut milk
    1/3 cup finely sliced galangal (ginger may be substituted)
    1 cup bite-size pieces of boneless chicken breast
    1/2 cup straw mushrooms (or sliced button mushrooms)
    1-1/2 tablespoons lime juice
    2 tablespoons brown sugar
    1 tablespoon Thai fish sauce
    2 teaspoons Thai chile paste
    1/2 cup cilantro leaves
    Serrano chiles, sliced (optional)

    Combine chicken broth, coconut milk and galangal in a large saucepan. Bring
    to a boil and stir for 1 minute. Add chicken meat and stir for 1 minute.
    Add mushrooms, lemon juice, sugar, fish sauce and chile paste and stir for
    1 minute. Pour into individual soup bowls and top each with cilantro
    leaves. For a hotter experience, top with sliced serranos. Yum!

  3. That isn't a cuisine thing. It's a cleanliness thing. I think the hot
    sauce helps prevent it (but makes you pay if it fails).

    yeah, i'm sure of it. I'm not sure which place he got these from but I never
    want to go back. He's convinced it was something else I ate since he had a
    bite of mine and did not get sick, but I ate the whole thing, he just had a
    bite.
