  1. Boneless, skinless chicken breasts this time. I marinated them in
    lime juice and made a crust from rehydrated chiles pasillas negras,
    pecans and Dijon mustard. All were ground in a mini chopper and
    patted on the chicken. Salt and pepper on the bird parts. The green
    stuff on the plate that's not green beans we got at a Mexican market
    in Sulphur Springs this afternoon. They called it "calabasita." I
    call it squash. I brought it to a sizzle in an iron skillet and added
    the rehydrating liquor from the pasillas a little at a time (it was
    reducing in another pot as I worked) to make a glaze of sorts. The
    little reddish chunks are diced red bell pepper. The whole skillet
    was finished in the oven and kept in the warming drawer. Under the
    chicken is a paste made from roasted garlic, rehydrated chile pasilla,
    olive oil and low fat "sour cream."

    NB: It's usually best to toast dried chiles a little before
    rehydrating them, especially if you plan on using the liquid. Be
    carefull not to burn them, though, That'll make them unpleasantly
    bitter.

    I thought it was grilled dill pickles. Looks good!....I really need to
    stop reading these posts when I haven't eaten dinner...

    I find that some meals really are better with a little rice or something
    to enjoy with the sauces and veg, a compliment to the flavors if you
    will. More well rounded?

    I like pasta better than I do rice... pasta is veggie too... orzo pilaf
    is my favorite.

    That's interesting. Here, they are considered the starch for a dinner.
    Although corn might be regarded as a veg. The recommendations for
    healthy eating from the government also treat those foods as carbs,
    rather than veg.

    It must be a cultural thing,. The French see potatoes as a vegetable, too.

    Yup. D's on phase one of south beach again after the holiday
    splurges. The blood oranges were only for me. Phase one SB forbids
    fruit.

    I was born in Baton Rouge and I once ate rice at least three times a
    week. Usually more than that. I love rice. I truly love it.
    Sometimes I make a little for myself, but when I'm cooking for the
    both of us I stick to the SB rules. More or less.

    Usually it tastes pretty good.
