Dinner last night

  1. Was it ever GOOD! First of all, when I'd see people, usually
    on tv, say ... get a skirt steak, I'd be like, yeah, I'll just run to
    the store. Honest, they never carried it. Ever. All of a sudden,
    what is this?? They've been selling it. Cool.

    Marinated (pineapple juice, soy sauce, garlic, ginger, little bit
    of vegetable oil) the steak, grilled it. Marinated some vegetables
    in something, grilled them first, then the meat. Holy crow, was
    the meat ever delicious. No need for a knife, only time I came
    close to using one it was on a recalcitrant piece of yellow bell
    pepper.

    Leftovers go on a grilled pizza tonight ... can't wait.

    Sounds delicious, with a really good marinade. There seems to be a
    great interest in the lesser known cuts.....hanger steak, skirt steak,
    beef cheeks (never tried those myself), all loaded with flavor.

  3. I grew up on skirt steak--my mom would marinate it in a a lot of garlic
    and either pan fry or grill it. We knew it as "roumanian tenderloin",
    from the Jewish delis/restaurants. Mom made it as often as she could,
    it was hard to find but it was one of those "gems" that was worth
    searching out.

    I well remember being in college (got off the meal plan after my first
    semester...ICK!) and skirt steak at that time was dirt cheap. If you
    could find it at all, it was 79 cents a pound, a bargain when hamburger
    was regularly $1.49, 1.59 a pound. And I would buy up every piece I
    could find and keep them in the freezer. I LIVED on steak--skirt steak,
    that is. Got all my friends into it. That was one of the few meats we
    could afford to eat. Then, the Mexican restaurants started serving
    Fajitas....skirt steak's demand increased, and so did the price.
    Suddenly, I couldn't afford to eat skirt steak anymore!!! Haven't been
    able to in awhile.

    Same thing with "short cut rump steak". Such a yummy little piece of
    steak, which I discovered in 1996. A couple yrs later, I saw a tv chef
    make one--and suddenly the price jumped from $2.99 to 5.99 a pound!
    When I catch a sale, I buy up packages of it, because it is a nice
    little steak, not tough, flavorful, lean....

    Skirt steak is also used for Mexican style carne asada. Same idea of
    marinating well, then grilling fast. Many shops in SoCal sell it
    already marinated.

    My recollection is that Nancy uses this tenderizing marinade for flank
    steak as well. -aem

    You're right. I use others, but that one is hands down my favorite
    summer marinade.

    How long did you marinate it, and how long did you cook it? I've never
    cooked a skirt steak before. Hmmmmmm.

    Marinated it one to two hours, grill on high 4 minutes, turn, 2 - 3 minutes
    more.

    Teriyaki! If all else fails, marinate skirt steak in teriyaki. It's
    wonderful.
