Dead Spread for Sarah

  1. Well, tonight is the night for the Dead Spread in honor of my recently
    passed friend. Other than chopped liver for the cats (which I've already
    made and it's in the fridge) I was non plussed as to what to make
    tonight. I've invited 2 other local people that participated in the same
    crime groups that Sarah and I did. I started digging through the Google
    archives and came up with a post from Sarah stating what she would
    request for her last meal before going to the electric chair. The
    discussion was about the last meal requests of prisoners on Death Row.
    She posted her last request would be shrimp cocktail, grilled T-bone
    steak, baked potato with butter and sour cream and a tossed salad with
    bottled French dressing. She wasn't much of a sweet eater. She loved
    the smothered hash browns (recipe below) from Waffle House so I'll be
    making those from a copycat recipe site.

    Here is the menu:

    Shrimp cocktail
    Romaine and iceberg tossed salad
    Bottled Kraft French Dressing
    Grilled T-bone steaks (with garlic butter)
    Baked potato w/sour cream and butter
    Smothered Hash Browns

    Chopped liver for the cats

    Merlot which I have yet to buy.

    Waffle House Hash Browns

    4 cups peeled and shredded potatoes
    1 teaspoon salt
    Water
    1 cup ice
    Vegetable oil for frying

    Place prepared potatoes in a 2-quart bowl, and add salt. Add ice and pour
    enough water to cover potatoes. Stir to mix salt and ice in the potatoes.
    Cover and place in the refrigerator for 2 hours.

    Place shredded potatoes in a colander, rinse with cool tap water and
    drain completely. At this point you can place potatoes back in the
    refrigerator covered until ready to fry. The uncooked potatoes will keep
    up to 5 hours.

    Heat a large cast iron skillet over medium heat. Add enough vegetable oil
    to lightly cover bottom. When skillet is hot and oil has been heated,
    place two cups of drained shredded potatoes in skillet. Fry until crisp,
    shaping with a spatula. Fry about 12 to 15 minutes, without turning. Time
    depends on the temperature and size of the shredded hash browns. When
    potatoes are golden, flip over carefully and fry tops of potatoes for 2 -
    3 minutes. Do not cover hash browns while frying or stir through them.

    Waffle House Hash Browns Scattered all the Way!

    1 slice American cheese (covered)
    1/4 cup diced yellow onion (smothered)
    Sliced jalapeno peppers, to taste (peppered)
    1/4 cup diced fresh tomatoes (diced)
    1/4 cup mushrooms (capped)
    1/3 cup diced lean ham (chunked)
    1/3 cup chili with beans, heated
    1 serving Waffle House Hash Browns

    Prepare Waffle House Hash Browns as directed. Leave them in the skillet,
    and add cheese, onion, jalapeno peppers, tomatoes, mushrooms and ham.
    When done, add chili on top of all.

    you. If she didn't, well I'm sure she is looking on what you did and
    smiles.

    In honor of your friend Sarah, may I attach a simple recipe from a church
    cookbook my friend Donna submitted. Besides being a choir director,
    semi-professional singer, college professor and all around good egg, Donna
    would always have something good to eat ready for her friends. Like Sarah,
    she left us too too soon.

    Pumpkin Dump Cake (Donna's recipe)

    1 29 ox. can of pure pumpkin
    3 eggs, beaten
    1 tsp salt
    1 box yellow cake mix
    1 1/2 sticks of butter, melted
    12 oz. can of evaporated milk (reg. or skim)
    1 c. sugar
    3 tsp cinnamon
    1 c, pecans or walnuts, chopped
    Nutmeg, ginger, cloves, or allspice (use at your discretion, to taste)

    In large bowl, beat eggs then mix in pumpkin, milk, salt and spices. Mix
    until spices are well blended. Pour into a well-greased 13x9x2 pan. Spread
    dry cake mix on top, then sprinkle with nuts and drizzle butter on top.
    Bake at 350 for about 50-60 minutes Serve slightly warm, may wish to top
    with cool whip.

    No she was a poster in ATC, a crime group we both participated in. She had
    interaction with some RFC posters when I became ill several years ago. Some
    of the people here remember her with good thoughts. That is why I made the
