Dark Chocolate Mint Baking Chips/Chunks

I pretty much limit myself to what I can find at the generic grocery
stores in the area, and I haven't seen dark chocolate mint chips.
Since you mention chunks as an option, you can make your own
by melting dark chocolate and stirring in mint. You might want to
add a little shortening to make the final product softer. Be careful
that you don't get any water in the chocolate when you melt it,
and don't let it get much warmer than what is necessary to melt it.

I have a friend at work who chops chocolate bars up with a knife
and makes wonderful cookies from them.

If you can get Peppermint Crisp bars, they can be chopped up and used like
choc-mint chips.

My ex-wife made some by melting and forming "After Eight" mint chocolates.
They were pretty good, for an ex-wife sort of thing.

Very late answer: Trader Joe's has large mint chocolate chips
(called UFOs), unless they have discontinued them again. They are
VERY good.

I have found mint (dark) chocolate chips (Hershey brand, mostly, but
sometimes Nestle) at Cub Foods and my local supermarket, but usually
just at Christmas. I melt them down, drop them into little discs, let
them get hard, and use them like discs in sandwich cookies I make.
