I agree here. Most recipes I've come across in the last year or so call for
a lot less added liquid(s) than in the past.
The only recipe I know of with Sauerkraut (haven't made it in over 10
years), uses, well, sauerkraut, granny smith apples, and Kielbasa. Don't
remember if it called for beer or anything else. (Michelob Ultra? Sam
Adams Light?) :-)
More recently, I've done:
Ribs: A couple of onions cut in half on the bottom of the crock. A rack or
two of ribs, some BBQ sauce between layers and on top and that's it. No
extra liquid. (I would even try just a dry-rub and no sauce at all, or a
little stock or water just in case.) (Also I tried the Carb Solutions Asian
sauce and it wasn't that good. Now it's called "Teriyaki Asian", but I
never tried it again.)
Pot Roast: Basically the same only I brown the roast first and put in the
pot (on the onions). Then glaze the pan with some beef stock (or wine) and
may saute some onions and mushrooms. That all goes in the pot too, and slow
cook 6-8 hours, etc. I've also been known to throw in a handful of peeled
garlic cloves...
Lamb: I've tried a couple of things, LEG and Shanks (browned) and its OK.
I've talked to a couple of producers and they say even a LEG is too tender
to slow cook for too long (So just less time?) So how DO you get lamb stew?
I prefer grilled chops!!!
