cream of turnip soup

  1. I thought turnip soup might taste good, so I tried making some for the
    first time and it came out really good. I used approximately:

    4 Med size turnips
    1/2 cup heavy cream
    1/4 stick butter
    1/2 cut water
    salt/pepper to taste
    1/2 teaspoon onion powder
    1 large Knor's Vegetable bullion cube

    I cut the turnips into chunks, boiled till soft, then drained. Add to
    blender with the cream and water and blend till smooth.
    Place in a pot, add other ingredients and simmer for 5 mins.

    It comes out very mild and sweet, almost like a potato soup. It tasted
    so good, now I'm thinking of using turnips for mock mashed potatoes

  2. try them roasted in the oven, they dont mock mash very well.

    Alternatively, swede (the orange turnips) mash suprisingly well - and a are
    delicious roasted as mock chips (french fries).

    This is what I mean by the word "fibrous". Turnips are a
    little stringy, so when you mash them the strings resist.

    In the US swedes are called rutabagas. Ruties tend to be
    larger than white turnips. Many think they taste
    stronger but there are mixed opinions on that.
