    thought I'd toss some red bliss and carrots in with the roast.

    How long should the vegetables cook?

    Until they are of the consistency you want when you poke them with a fork.
    Depends on the size of the vegetables.

    Depends on how you cut the veggies up. I use big cut up pieces so I usually
    add them the last hour or so.

    My only suggestion is to go easy on the parsnips. They're so sweet that
    with the carrots (also sweet) you might overpower your pot roast. I did
    that once to chicken soup and really was disappointed. No celery? I love
    cooked celery.

    I found that when you cook red bliss potatoes in the crockpot with meat, by
    the time everything is done, the skins have slipped off. Still tasty, but
    not very pretty.

    Depends too on how long you are going to cook the meat. :-)
    I personally leave the veggies almost intact. Carrots, cut in half,
    small spuds left whole (or cut into halves or quarters for larger
    potatoes), Medium sized onions, quartered.

    I put them in at the beginning and let 'er rip!

    One step dinner. ;-d Unless I am going to make gravy...

    I usually let my meat cook for a while then add the veggies later.
    Then check them with a fork before I remove them if they are done.

    An hour should be plenty of time. I usually let the roast braise
    for 1 1/2 - 2 hours, then add the veggies. Man, that sounds so
    good. DH wants meatloaf for dinner, but I'd much rather do a
    nice pot roast. We have to make the weekly trip to the store
    anyway, I'll have to see if he's willing to change his mind...
