Clam & Oyster Pizza?

  2. We haven't tried Oyster. There would be a risk of overcooking and it ending
    up rubbery. You could use those canned smoked oysters, in itty bitty pieces.
    Clam, on the other hand makes wonderful pizza.
    Use a light fluffy dough; cook at a very high temp for short while; go easy
    on the cheese; use a very small amount of tomato; combine it with scallions
    or some such thing.
    I may do it tonight.

    I haven't made pizza at home, but Otto (Mario Batali) has a
    "clam"pizza that I did try. It had cockles in their shells all over
    it.

    I don't know if this would work in a normal pizza oven. Otto makes
    them on a griddle with an overhead flasher. The combination lets them
    vary the ratio of above and below cooking. With that caveat, I liked
    eating it.

    Reviewers were put off by the shells, but I normally put clams in
    their popped-open shells in my clam soup, and It seemed natural to me.

    the pizza crust. I've also had shrimp and garlic. Same deal. LOTS of
    garlic!
