Chicken Thigh Help - AGAIN

  1. Well, here I go again. My hubby bought a batch of chicken thighs and I
    don't want to roast them in the oven because he also bought two whole
    chickens to roast - so..........that's a lot of roasted chicken!

    I'm thinking of putting the thighs in the crock pot - maybe a chicken stew
    type thingy? But, once again, I have to work with the ingredients I have on
    hand.

    Those would be:

    Thighs, broccoli, cauliflower, spinach, onion, garlic, peas.................

    I have some homemade chicken broth as well. Would a stew-like thing be
    feasable from this? If so, what herbs and spices would you recommend? (I
    have no milk, no soups, no cornstarch - just to let you know.)

    I don't have them, that's the problem. I have to work with what I have on
    hand. My hubby won't eat any carb thing anyway. Sigh. I wish he would!

    I would say sure, you could make a soup/stew from those
    ingredients....why not. Not sure I would use 'em all...but you could.

    do you have any tomatoes? or canned tomato type things? (diced, stewed
    etc) I googled for chicken stew recipes and most of them called for
    either some type of starch (potato, rice etc) or tomatoes (or both lol)

    Here's an example of one that fits what you have...

    It does call for a roux (which I would guess if you are avoiding carbs
    would be off limits) I suppose without that it would just be thinner...

    That's a great base! I wish I had tomatoes, but no, I don't. I don't have
    carrots or celery, either, but I'm thinking, with the base that you found
    here, add a little beer as well and do onion and garlic???? Beer, onion,
    garlic chicken with the thyme and maybe a little pepper? That just might

    Kili,

    Try this.
    Remove the meat from the chicken thighs and cut into bite sized pieces.

    Cook the chicken pieces in a little oil, in batches, in a wok or large
    pan. Remove and put them to one side.

    Sauté the onion and garlic in a little oil in the pan until the onion is
    transparent. Then add your chopped veggies and stir-fry them until done
    to your liking. If you have soy sauce, fish sauce, (oyster sauce is also
    nice) add this to your veggies. You could also add a little chicken
    stock too, and of course, salt and black pepper to taste.

    Once this is done, add the chicken pieces back to the pan and fry it all
    up together until the chicken is heated again.

    We usually have this with rice or noodles, but if you are worried about
    carbs, I dunno about that! 🙂 Hope this helps.

    kili, is sounds like you have everything necessary to do some brasied chicken
    thighs that would taste really awesome. you could brown off the salt and pepper
    seasoned thighs in sautee pan with the oil of your choice. remove
    them,(reserving the amount of fat you want) throw in some chopped onion and cook
    them until most of the moisture is out, add some flour and let that cook for a
    few minutes to toast the flour. throw in some chopped garlic to brown for a
    minute or two then add some chicken stock to make a nice braising liquid. toss
    the chicken back in the pan, cover and bring to a simmer. cook the chicken at a
    low simmer for 45 mins to an hour. (depending on the size of the thighs) serve
    with rice or potatoes or even some mashed fauxtatoes made with steamed
    cauliflower(a decent option for the low carb set). the chicken will be tender
    and flavorful. the gravy/sauce kicks ass too. i had nearly the same thing for
    dinner friday except mine invovled some bacon and a cup of red wine. i had it
    with rice pilaf and peas.

    How much garlic do you have? Doing a version of chicken with forty
    cloves of garlic might be good. It calls for garlic, thyme, and white
    wine--not sure if you have the latter, though. Otherwise, for a chicken stew,
    garlic and thyme still sound good. Bay leaf if you've got it,
    onions/carrots/celery would be a nice addition, too. Perhaps some cooked and
    pureed cauliflower would work for thickening.

    Occasionally, I braise chicken thighs in a garlic-anise stewing sauce,
    the recipe should be on the RFC website under the Chicago cook-in. It's sort
    of unusual in that you eat it cold, and the "sauce" turns into a flavorful
    jelly. (Fat does need to be skimmed off the top.) Boli likes it, but then,
    that old coot eats all the garlic out of it first. ;P

    How about a variation of "Chicken Cacciatore"? Try here;

    Looks like you can scratch something out with what you have on hand. It's a stew so there are
    no real rules. Generally, it's tomato based chicken stew, Italian style. Hearty eating
    and not something either of you would likely pass up.

  13. Chicken spinach salad ?

    Brown the chicken in oil with galic and onion. I'd add either a basil
    or sage spice mix of some sort. Or go with cumin and oregano for a
    chicken taco salad type thing.

    Serve over a spinach salad. Add any other veggies you like.

    Normally I add croutons, but many other things can liven it up. Bacon
    bits, nuts, cheese come to mind.

    Also, you could try a beef with broccoli recipe using chicken instead.
    Stir fry the chicken and broccoli in a brown bean sauce. Again,
    normally served with rice, but it should be fine without. I'm never
    sure what no-carb people do for side dishes.

    You could bread them then just pan fry them. That's my favorite thing to
    do to boneless skinless chicken thighs. Oh course I do highly season the
    breading. OOOPS! I forgot the low carb dealie...nevermind.

    Do you have any pasta or rice? IIRC, one of you is low carbing so you
    likely don't. If not, I would either pan fry or bbq the chicken thighs.
    Serve with steamed cauliflower and steamed spinach. Save your other
    ingredients for another day. What herbs do you have? Do you have any
    blends like lemon pepper? I would go for something light if pan frying
    your chicken. You might want to use something a little more robust if
    bbqing your chicken.

    Kili, onions and peas are carbs 🙁 You could work them in for yourself
    but not him as long as you aren't low carbing too.

    After cooking the thighs in the broth, strip off the meat and cut/tear it
    into bite-sized pieces. I'd season it with the onions, garlic, and thyme,
    tarragon, or dill. Peas would be good in there, too.

    Then make a spinach salad to go with it.

    Stir fry!!!

    Start with the onions.

    Chop them up and fry them in some oil until they are beginning to clear
    and are well wilted. Chop the chicken thighs into cubes and add them to
    the pay. Sautee until they start to brown a bit, then add the brocolli
    and cauliflower. Add garlic, a bit of water and cover to steam the
    brocco/cauli. soft. Top with spinach and re-cover and let that wilt. Mix
    it all well and serve. You can add peas to this as well, or some
    scrambled eggs.

    Serve over rice or pasta if you have it. :-)
