On tonight's menu - Long time comfort food and modified from my earlier
newly wed meal of shake & bake chicken, mashed potatoes, corn niblets.
Now it's evloved to lightly coated - homemade coating without sugar -
baked boneless & skinless breasts with peach chutney, steamed swiss
chard, and saffron rice. A late season tomato salad with fresh herbs
will be served as well. Here's the pic of the salad & main dish.

DH needed a dessert for a meeting tonight. I made him meringue desserts
    - 2 dozen. This is a dessert I modified years ago and still works well.
These are very easy to make but they do require time because of the
long baking & cooling times. The real trick is getting the meringue
just right. The centre of the nest should only be big enough for a 1 -
1 1/2 tbsp of filling. They are a great way to use up bits of left over
jams or jellies so are quite economical. DH likes them filled with
lemon curd or cherry pie filling. A chutney such as peach or mango
would work well too. Here's the pics.

    http://tinypic.com/ern687.jpg - baked & ready for filling
http://tinypic.com/ern7l2.jpg - filled & ready to go - fillings were
    strawberry, apple, & sweet cherry

Before anyone asks, I'm not sure if you could make these using splenda
as I haven't tried. I suspect if you could then used a low sugar or
dietetic filling they would be low carb as well.

  2. So, I read this subject line and I'm thinking "Chicken
Pavlova"? "Chicken Meringue Pie"? Yum. :=)

Wouldn't that be a taste sensation - chicken meringue pie 😉 It might
go over well with kids. They like eating weird combinations.

The meringue desserts went over well. DH was the hit of the meeting &
now the other wives - one per meeting - are going to have to send
dessert each time. I have already had one phone call in protest of
this. Always glad to do my part - VBG!

Some popular news servers do not carry any binaries.

Being a little nasty Dimitri? No one is forcing you to look at any of
the pics I post & you are always free to kf. In fact, please do add me
to your kf that way you won't have to be bothered with being nasty but
rather have a nice peaceful sharing of cooking ideas. Yep, please kf me
& please do it now. TIA 🙂

The glistening tomatoes as you put it had the viniagrette dressing on
them already. It was *not* shake & bake chicken either. Guess you must
of liked the saffron rice & the swiss chard since you had no neg
comments on those. Oh & you must have liked the meringue desserts. You
could have used one to sweeten yourself up.

It tasted good too 😉 Nice that you *choose* to be insulting. I
thought better of you but realize I was wrong. Please just leave me alone!

Tinypic is easier and *those* who *choose* to look can do so without
having to subscribe to another ng.

Correct, they don't which is why web based sites for posting pics is nice.
