I am reading alot of those charity rides. Like a charity ride to raise money to support the mermaids of the south pacific and the charity rides of protecting the people from the rainforest.

Presumably you need to find an established cause for which you wish to raise money for? What established cause do you wish to raise money for?
As soon as you decide this, you then need to contact that charity that you intend raising funds for telling them that you intend to organise a charity ride on their behalf and ask them to allow you to raise funds on their behalf.
If they're happy for you to organise a charity ride on their behalf, they might be able to send you their charity logo which you can use to draft advertisements for the ride and to create sponsorship cards to log donations for the ride.
I take part in Audax events. I contact several charities, such as the Hospice Foundation, and they send me documentation (sponsorship cards) which I use to raise funds on their behalf.
If I obtain an especially large corporate donation, I ask the charity to separately acknowledge that donation with a personal note from the charity to the corporation thanking them for their donation. This ensures the charity and the donor are both aware of the donation.
If you intend organising an event for a new charity, then you have your work cut out because you will need to explain what the charity does and make sure that there is full transparency with regard to fund raising and to where the donations will ultimately go.
