AFAIK, the largest available chainring is 53 and the smallest cog is 11.

Shimano front derailers for double are spec'd for a big ring of 50-56T. But you can probably exceed that by a bit and still have everything work OK. 60T rings can be found for 110mm and 130mm BCD.

I meant to say that Shimano chainrings for road use don't go larger than 53T. There are 55T and 56T chainrings available from FSA. Haven't seen a 60T yet though.

If Shimano specs their FD up to 56T, then why don't they make the chainrings to match them? Or do they?

They do. Tri rings 54,55 and 56.

Salsa Pro do a 56 that is ramped and pinned at130mm bcd
If you had a 110 BCD crankset then Veulta make a 63T
areyou using small wheels? We spin out at about 75kms/hr using 54/11 on a good dwnhill on our tandem.
