I don't know if this is very different from anything posted before, but I
couldn't find anything through Google that was much like it, so I thought I
would post it in case anyone would like to try it. It is similar to the
"fauxtatoes" recipe that has floated around here.
I took a pound of frozen cauliflower florets, punched some holes in the end
of the bag with a fork, and microwaved them for about twelve minutes on high
in a microwave-safe dish. I drained the water from the holes in the bag,
and emptied the cooked cauliflower florets into a mixing bowl.
I added about 2 oz cream cheese, two eggs, a tablespoon of butter,. about
1/4 cup of parmesan cheese, fresh ground pepper and garlic powder, and mixed
it with a hand mixer (I guess a food processor, or if you're patient, a fork
would do the same). I refrigerated it for a few hours and let it "set" to a
fairly firm mixture, and then took out a handfull and made a flat patty and
fired it in hot canola oil (this makes several patties). This tasted pretty
good by itself, but I also used it as a "base" for a cheeseburger, and it
was good.
Just thought I would pass this along, if anyone is interested in trying it.
