I agree. Naked cauliflower. Er, almost naked, perhaps
dressed in a bit blue cheese.

No recipe needed: provide your own. 🙂

My favorite way to use cauliflower is in place of mashed potatoes in a
casserole or as a side dish. It's delicious and I love the
mashed-potato-ish texture. It doesn't taste like potatoes, but that's okay.

My 2nd favorite way to use cauliflower is in place of rice (processed
differently, of course, to get a rice-like texture) and use it in a rice
type of dish such as Spanish fiesta chicken & rice.

  6. It is rare that I miss spaghetti these days, but if I do, I steam chopped
cauliflower, and mix with spaghetti sauce. A healthy spread of grated
cheese on top makes it perfect.

I use it often as a potato substitute. Sometimes I mash it and eat it
as a side, or as the topping for a sheppard's pie (covered in cheddar
cheese). If I'm making a chowder, I chop it into chunks and use it
instead of potato cubes. It's also good in a chicken curry dish. I
once even made a polenta style meal chopping fresh, raw cauliflower in
    a food processor...wasn't good though. 🙂
