Canning and the "snap"

  1. Novice canner here.

    I noticed that when I take jars out of the boiling water
    (acid canning....25 minutes in bath)......sometimes I hear
    a definite and loud snap from the lid right away and some of the jars take
    longer.....and some I don't hear at all.

    Yet all seem to be sealed fine after several days.

    Is this typical?

    Some snap right away and loudly....some don't?

    Also, I notice that loud snap more on the wide mouth jars.....you too?

    It can happen that way. The loudness of the snap can be affected by the
    amount of product in the jar. And sometimes they seal while they're in
    the water. And rec.food.preserving is the place to be. Come join us
    there.

    I think it relates to the headroom in the jar.

    It's a safe feeling when you hear that pop.

    "haimish" sound.

    Journalists like to ask why I do it. It satisfies my soul. When my
    jellies are lined up with the sunlight behind them, it looks like a
    stained glass window. A spiritual connection between me and my
    ancestors. Could be worse.

    Yes, you want to hear the snap. The snap means a good vacuum therefore
    a good seal. Many of us count the snaps to know exactly how many jars
    sealed. A seasoned canner will do this by nature. I even have DH
    trained to listen for the snap. Your lid should be concave hence the
    snap so make sure each and every jar does this.

    BTW, I'm nearing the 200 mark for jars canned this season. By the end
    of the season, I will hit 400. That's a lot of snaps to count but I do
    it automatically. I actually do more than that if you take into
    consideration things that have no season like baked beans, mushrooms,
    port wine jelly, etc.
