Can I Freeze Spinach

I suppose so since you can buy frozen spinach if you like the
stuff. (It was one the things that I forgot to mention in
another thread but I can eat uncooked spinach but not cooked.)

Sure you can.

This is the way I do it. I buy a huge bag which I couldn't possibly eat in 2
days, so I serve what I want fresh, then cook all of it, (2 portions at a
time), and put each 2-portions in the zip-lock containers.
Economical twice, because you've only used one pan.

That's pretty good info, but as usual they overdo the blanching. You
can reduce all their times by a factor of two or three and be better
off. The enzyme action is stopped and the risk of overcooking the
veggies is reduced. -aem
