cabbage or cauliflower casserole

  1. Sour Cream, Cheese, and Scallion Casserole

    Boil 4 cups or so of cut up cauliflower or thinly sliced cabbage until
    almost done. Drain well. Add about a half cup of chopped scallions, a
    cup of sour cream, and a cup or more of grated cheese. Mix and dump
    into a casserole. Sprinkle with parmesan cheese. Bake in moderate oven
    for about 45 minutes, until cheese is melted thoroughly.

    It's a take off on the same thing made with grated potatoes. My
    kids--grown--love it. And cabbage is cheap.

    Try putting some real bacon in your cauliflower casserole, it's wonderful! I
    but a big bag of already cooked and crumbled bacon at Sam's Club, good on
    salads or in a baked Swiss quiche🙂

    I had a BLT salad for dinner last night -- romaine, homegrown tomato
    wedges, chopped cooked bacon, and a few dollops of mayo. YUM! The cats
    wanted the dish afterwards. :-)

  5. I tried this recipe last night with cabbage. It was excellent and so
    easy to make!

    I only used about half the amount of sour cream, as that's all I had,
    but it sure came out great. And it's easy to freeze for later use too.

    Thanks so much for passing on one of the best recipes I've seen here in
    a long time!

  6. It looks to me like this recipe could also be made by slow-cooking in an
    iron skillet or maybe in the microwave.
    Think these methods are possible?
