  1. I been playing around, making different concoctions. Trying to use up the
    cabbage I have in my garden.

    Last night. I went to make some broccoli and cauliflower with butter and
    cheese. For a side dish at dinner. I also was making hamburger patties. It
    didn't seem like enough to eat. My teen sons eat alot. (Yet low carb). So I
    went out to the garden. Got a head of cabbage. Shredded it, and cooked it along
    with the Broccoli and Cauliflower. Added in some diced garlic. Got to looking
    at the hamburger patties. Said what the hey. I cut them all up, addded it right
    on in with the the vegetables. It turned out well. The concoction was
    delicious. I put some saltless salt, and ground pepper on mine. Added in a
    small amount of red onion. Yummy!!

    I was visiting a friend earlier today. She is just starting the low carb diet.
    Doing Atkins. I don't usually like yellow or green squash. The way she made it
    it was really good. She used 2 medium of each. Diced onion, garlic. Then fryed
    it with some butter, on low. That was really good.

    I have a bunch of squash in the garden. Can't wait to use it up.

    To the gardeners in here. I have tons of tomatoes. But they aren't ripening.
    The weather has been cooler than the norm. High in the lower seventies. Then at
    night, in the fifties and sixties. What a weird summer its been here with
    weather. Any suggestions on how to get the tomatoes to ripen more quickly? I
    have at least 60 huge green tomatoes, that I can see right now. The cherry
    tomatoes are doing good though, they are ripening fine.

    My folks had a veggie garden for decades. My mom used to make a
    wonderful green tomato casserole. I never got the recipe (figured if I
    had it I'd be expected to make it!) but I bet googling on green tomato
    recipe will turn up a bunch of good ideas.

    I'm no gardener either, but my Dad would pull up the entire plants
    bearing the green tomatoes and hang them upside-down (the whole
    plant!) in the garage, and the tomatoes would eventually ripen!

    DH and his dad used to work for a local tomato farmer. They both have told
    me that if you can see a 'white star' on the bottom of the tomato (opposite
    the stem) it can be picked to ripen indoors. The star is made of white
    streaks that look like ribs spreading from the center.

    We're having the same problem here in Indiana. (I know it HAS to be the
    unusual temperatures we've been having---Indianapolis set a record low and
    high of 46/low 60s yesterday!!!) I don't know what the solution is for
    making them ripen sooner. I tried making fried green tomatoes using crushed
    pork rinds for breading; they were only marginally satisfying.

    For the most part, you just have to wait.

    In the late fall a couple or three weeks before frost, I top the
    plants, remove any growing tips, and pinch off blooms or smaller
    fruit. This allows the plant to put more energy into the larger
    fruit. But I don't do this earlier in the growing season, as
    obviously you're removing other potential harvest. If you're really
    impatient and have several plants, I suppose you could try it with
    one.

    We just put the tomatoes on the windowsill and they eventually ripen, no
    matter how green.

    Have you tried fried green tomatoes?

  8. I like green tomatoes and all. But not that much. Not to use the 60 or 70 I
    have in the garden. My window sills are full of green tomatoes also. Some are
    turning red. Most aren't. Its the weather, has to be.

  10. I am going to wait untl the end of August. I just don't see the tomatoes
    turning red anytime soon. Its not warm enough, the sun is not out enough.

    That is a great idea. I can pull all the plants, hang them upside down, along
    my back porch.

    It is the weather. It is something else isn't it. I got a cold/bronchitis thing
    going on. From sleeping with the window open on the 50 degree nights.

    I like fried green tomatoes alot also. Just not that much.. LOL.

    I tryed atkins bake mix. The bake mix turned out a little on the clumpy side.

    I think its just too chilly, the sun is not out long enough to ripen them. I am
    going to wait until end of August, see what happens.

    Of course the cabbage is doing great.

    Just had another thought: you could pickle the green tomatoes, if you have
    some left at the end of the season. I've never done it myself, but
    Sechler's makes wonderful (dill) pickled green tomatoes. You might try
    googling for a pickle recipe.

    Just be patient. I picked my first red cherry tomatoes this week. I
    don't expect any red big tomatoes for at least two weeks.

    Central Ohio. I am trying to be patient. I am just used to the tomatoes
    ripening already.

  16. I made a broccoli/cauliflower salad. I just cut up the broccoli and
    cauliflower added some diced onions a little bit of sweet and low and
    mayo. It was really good.

    Which brings up the possibility of a green tomato salsa or a green
    tomato gazpacho!
