I have a recipe here that calls for 1 cup buttermilk. If I can't get
buttermilk, what's the best substitute?

From the CDkitchen:
Buttermilk Substitute
For each 1 cup buttermilk called for in a recipe, use 1 cup plain yogurt or
sour cream;
OR
1 tablespoon lemon juice or vinegar plus enough milk to make 1 cup;
OR
1 cup milk plus 1 3/4 tablespoons cream of tartar;
OR
1/4 cup buttermilk powder and 1 cup water.
I hope this helps. I love butttermilk. I love it especially in the summer
in a cold glass with some s&p. I also like to make pancakes with it.

In a pinch you can add some lemon juice or vinegar to milk. It's not
quite the same but will give similar results.

Thanks Michael - it does help! Going to print this out so I don't lose it
again.

It's a recipe for a gingerbread cake... for gingeroholics! If it works well,
I'll post it.

Thanks Dave.... it would be a pinch, as it's not available where I live!

They have said you must post the recipe, because you must know the acidity
of ingredients.
Am I right folks?

Ps. I need buttermilk for "Angel biscuits". I don't know if somebody knows
this recipe.
Cheers

In that case, I recommend buying plain yogurt at the supermarket and
substituting it for the buttermilk.
