Not sure which loop you mean; Jevington is quite punishing on the SDW
proper

1/ Best route from Brighton station to Devils Dyke?

As you come out of the front of the station, turn right and go back on
yourself, along Terminus Road and carry on to the Seven Dials Roundabout.
When you get there, go up Dyke Road (A2010). Just follow this road (it
goes on and on) until you cross the A27, and that leads up to Devil's Dyke
eventually.

IIRC South is mostly footpaths and therefore a bit naughty, but it is more
scenic as it goes along Beachy Head. The North route is mostly wide,
chalky bridleways, still with some good views. They're both hilly. Not
sure which is easiest, there's certainly some hills on both I can't make it
up without pushing!

I'd guess 4 or 5 hours assuming 6 - 7mph average which is all I usually
achieve when off-roading. I'm not quite that slow on road! 🙂

Very good. All sorts of stuff going on for most of the day, all free as
well. You've got to be mad to drive there, though. Usually all roads are
gridlocked in and out of the town for a few hours.

continue over the bypass, and keep going up. though its in wrong direction,
or Eastbourne!

no idea on the rest- i have gone from Eastbourne to Brighton via the A27
(Lewes), rather than over the hilly coast road.

an excellent day out; rode down there using mostly lanes; which of
course took much longer than I thought so had to do a TT into
Eastbourne for the start (which was only a chopper). Usual excellent
show including a full display by the Red Arrows (first for a while
there due to clouds and idiots in light aircraft last few years). No
paras, too windy. Ride back was a slog into a crosswind; 132km in
total.

Strange; I can only muster the enthusiasm to do this sort of distance
on an organised ride or if there is something really special at the
other end. The Shepway airshow in Kent used to be a nice 100 mile ride.
