Big day tomorrow cooking for our birthdays (actually 19th Aug. but
celebrating on 20th). My birthday, my twin sister (surprise surprise)
and DH (that is a surprise hey?).
My twin and her partner are flying in late Fri nite so am doing a
Birthday breakfast for Sat. morning. Thought I would go American,
seeing you guys are good at recipes that can be prepared the night
before and not just a boring Aussie breakky of eggs and bacon. Did some
searching here and found a recipe called 'Xmas wifesaver bake' (nearly
typed 'wifebeater' ha! ha!). You prepare it the night before with
layers of bread, smoked ham or proscuitto, tasty cheese and beaten
eggs. Refrigerate it and then bake in the morning for 1 hour. Sounds
yummy. Served with a big platter of tropical fruits, orange juice and
champagne, hot rolls and fresh coffee. Sitting on our deck with a
pretty view, life doesn't come much better than that, at 53 (in a few
hours).
Lunch : fresh diced cooked prawn (shrimp) meat mixed with a good mayo,
herbs, dill peppers, onion in fresh bread sandwiches.
Afternoon tea: pikelets and jam, Indian yoghurt & banana cake.
Dinner: Avocado salsa and tomato and chilli dips with corn chips.
Roasted green chilli and pork stew; black bean and fresh corn stew;
lemon and dill rice; dessert - fresh mango slices, lemon sorbet and
warm little lime puddings.
Do you think we'll last through the day?? Gotta get thru all the
cooking first. But plan to do that tomorrow.
