best pancake mix?

  1. I would like to get an idea of the best low-carb pancake mix. I have tried
    some pretty awful stuff.

  2. The best I found was Keto. The blueberry one was pretty good. But
    they went kaput. Been using Atkins now, but it's not as good. Still,
    with syrup and some raspberries, it's still a nice treat.

  3. Atkins made some a while back that wasn't too bad, and the pre-made frozen
    waffles were a little better. Neither of them was fantastic though.

    You might try George Stella's pizza crust recipe (cooked like a pancake) I
    tried the basic recipe with a little flavoring and sweetener in my waffle
    Iron. It too wasn't bad, but wasn't the "fix" I was hoping for

    1 1/2 cups soy flour
    3 eggs
    3/4 cup heavy cream
    1/3 cup club soda
    1 teaspoon salt

    Awful is subjective, of course...I use CarbQuik occasionally but prefer
    cream cheese pancakes.

  10. I made these"controlled carb" pancakes last week and they were very good.
    Wouldn't call them low carb, but definitely fewer carbs than their IHOP
    cousins.

    1 cup almond flour
    1/4 granulated splenda (more if you like them sweeter)
    4 eggs, beaten
    1/2 cup club soda or seltzer
    Sugar free vanilla (or other flavor) to taste (i like it, so i added
    about 2 or 3 TBSP)
    2 TBSP whipping cream
    1/4 tsp salt
    dash of cinnamon
    Atkins Bake mix...1/4 to 1/2 cup

    Mix all ingredients EXCEPT ATKINS BAKE MIX well. Slowly beat in Atkins mix
    until the consistency is thick enough. to hold form when poured.

    Pour on a griddle, cook and enjoy with SF syrup or fresh fruit.
