Best endurance-building workouts for cyclists

Whats the deal with all the fuss about structured interval workouts for building endurance - cant you just ride a lot and get the same benefits, or are we all just drinking the Zwift Kool-Aid? I mean, seriously, how many of you are actually following a carefully planned periodized training plan, and how many are just winging it and still managing to show up at the group ride on Saturday morning feeling relatively fresh? Im not saying that intervals dont work, but I am curious - is the emperor wearing any clothes here, or can we all just chill out and enjoy the ride? And before you all start yelling at me, Im not talking about racing or trying to be a pro - just your average Joe or Jane who wants to be able to ride 60 miles on a Sunday without needing an oxygen tank. So, whats the real story here - do we need all the bells and whistles of a fancy training plan, or can we just ride and be happy?
