My rear bearing rumbles a little. Wheel doesn't wiggle, so I assume it's a little tight. Is that correct? Or is there something more nefarious going on in there? Assuming it's just tight: It's being used with a quick release, so I figure I ought to build it a little loose before installing. Is there a standard amount to back off (like a quarter turn or so) or is this a trial and error thing?

Trial and error. But more likely than being tight your noise is caused by dry bearings or just plain worn out hub. Get in there and clean, regrease, perhaps replace bearings and cones. How many miles on this thing?

It's a mystery. This is the beater I found in the attic. At the time I first fixed it up I didn't have much time and even less money, so for the bearings all I did was back 'em off, squirt in a bunch of grease, put 'em back together, and pray a lot. (: I'm taking it apart now. BTW, if I have to buy some new bearings, what, exactly, do I ask for when I get to the bike shop? Just "hub bearings" and however many balls it has?

When you take the wheel apart, clean all the grease off and check for cone pitting. If the cones are pitted you will need to bring them to the LBS so they can be matched up since there are a million different cone styles. Sometimes a cone has only a few pits in one spot and as an emergency measure you can reassemble the wheel so that the pits are on the top where there is no load. Grease and reassemble the wheel with new balls and just enough preload to prevent wheel slop.

Ooh, yeah, they're shot. The races in the hub are still smooth, but one cone looks like the grease was contaminated, and the other looks like it was either out of round, or a few balls were bigger than the others. Guess I'll overhaul the front and BB while the bike's apart since I figure they're probably in similar shape.
