b-day cake for dieters??

  1. Who can help me? I need to come up with a yummy birthday cake for
    someone who's dieting, but loves sweets. I'm looking for something
    that's NOT a fruit cake or a spice cake, but something like a low-fat
    chocoalte or yellow cake with a decent low-fat frosting.

    This is REALLY good, and awesome with raspberry sauce :>

    Chocolate Angelfood Cake
    (from: The Little Black Book of Chocolate)

    1-1/2 c egg whites (12 large eggs)
    1-1/3 c powdered sugar (confectioners)
    ¾ c cake flour
    ¼ c unsweetened cocoa
    1-1/2 tsp cream of tartar
    ½ tsp salt
    1 tsp vanilla
    ½ tsp almond extract
    1 c superfine sugar

    1. separate eggs, place whites in large bowl, set it aside to room
    temperature

    2. Preheat oven to 350o.

    3. Sift powdered sugar, flour, cocoa, 3 times. Set aside.

    4. In a large bowl, add cream of tartar and salt to eggs and beat
    until soft peaks form. Add vanilla and almond extract.

    5. Beat in superfine sugar, 2 tbsp at a time until eggs are stiff and
    glassy. Sprinkle 2-3 tbsp flour mixture in and fold gently. Continue
    until all is gone.

    6. Pour batter into ungreased tube pan and bake 55 min.

    7. Let cool upside down.

    8. Garnish with any or all of the following: chocolate drizzle,
    whipped cream (lite?), raspberry sauce, raspberries, black berries,
    and blueberries.

  3. ooooooh, good idea! My mom had an angel food cake pan, with a
    removeable bottom (like a springform, sort of). Will angel cake really
    work in a regular tube cake pan?

    I think it would, but I have to admit I have a regular angel food cake
    pan with a removable bottom.

    I vote for the angel food cake with fruit. If there must be chocolate,
    there are actually some pretty decent sugar-free chocolate syrups available
    in most grocery stores.

    My first thoughts run to Angel Food. Low in fat and sugar both, especially
    if you use something like Splenda Baking sugar sub. And, rather than icing,
    you can use a fruit puree....say, raspberries, blackberries, and
    strawberries. Buy frozen, thaw them and run them through the blender and
    sieve the seeds out. Delicious and gorgeous to boot.

    Low fat is not always low calorie, unfortunately.

    My first thoughts run to Angel Food. Low in fat and sugar both,

    Well, low in fat, but not so much in sugar. The USDA
    database says that per 100g (3 oz) serving it's got 59 g
    of carbs, of which 30.5 are sugars. But only .3 g fat,
    which makes it nearly no-fat.

    And since the worst thing for fat loss is to eat fat and
    sugar together, the high carbs here are less trouble than
    if they were traded for equal calories of fat.

    Yes, but friendship is about respecting the choices made by others. if
    I bake a "real" cake, he spimply won't eat it and I'll look like I
    don't care that he's been strictly dieting for a whie now. I don't feel
    that it';s my choice to make. I don;'t really want to bake a regular
    cake only to have him feel obligated to break his diet to eat a piece.

    That's assuming it's made with straight sugar. I make it with Splenda for
    Baking. I test several times a day, so believe me, if it was high carb I
    wouldn't be eating it.
