  1. I'm finishing a brisket at 325 F for 2 hours.
I'm making au gratin potatoes, which I normally bake at 375 for an
    hour.

The brisket will rest for 30 minutes, so I can crank the heat back up
to 375 for the au gratin. Should I increase the cooking time of the
potatoes during the time they'll cook at 325?

    Yes

What do you think? 45 minutes? An hour?

I think we're going to go ahead and get a double-oven range to tide us
over until we commit to the whole kitchen re-do. I run across this
problem at least twice a week.

What do you think? 45 minutes? An hour?

Why would you double the time it bakes to compensate for only a
50F degree difference for half the time (30 minutes) it was
supposed to bake in the first place?
