This is a very good piedmontese recipe. Amaretti are typical piedmontese
cookies.
To make this cake you don't need any baking powder nor flour. The only thing
you have to do, is cooking it at low fire for 2 hours. (I always cook it
with convention oven)

Amaretti's Cake.

800g apples - sliced
1tbs water
400g amaretti cookies - crumbled
150g sugar
120g chocolate - dark and chopped
3 eggs - whole
2tbs breadcrumbs
1tbs cocoa - powder
1tbs orange - grated skin
1tsp cinnamon - powder
5tbs Rum
Cut the apples in slices of about 5 millimeters of thickness (without skin)
and cook them (together with sugar and 1tbs of water) in a covered pan at
low fire for about 20 minutes. When the apples are cooked, let them cool a
little, then whip them in a mixer and put the purée in a bowl. Add to the
purée
the crumbled amaretti, the chopped chocolate; the breadcrumbs; the cocoa
and the eggs. Mix all these ingredients and then add cinnamon; grated orange
skin and rum. Mix again.
Butter and flour a cake pan (instead of flour you can use breadcrumb). Put
inside the mixture. Cook in the oven at 140C for two hours.
In this cake no baking powder, nor flour!
