I have a quart in the fridge draining through a collander with a paper
towel. The drippings look clear and watery, which I didn't expect based
on the white gooey mess of my previous experience. In my previous
experience all the sourness seemed to fall to the bottom while the stuff
left at the top was rather sweet. I've tried some Middle Eastern yogurt
drinks and they're horrible, but I thought the gooey sour stuff might go
well in macaroni and something.
I suppose I'll just have to see what I'm left with tomorrow.
