Pineapple Upside-Down Cake

· 3/4 cup sugar
· 1/4 cup boiling pineapple juice
· 3/4 cup cake flour
· 1/8 teaspoon salt
· 1/2 teaspoon baking powder
· 2 stiff-beaten egg whites
· maraschino cherries
Beat yolks until very thick, gradually add sugar and continue beating.
Add boiling pineapple juice, mix well. Add sifted dry ingredients, mix
until smooth. Fold in beaten egg whites.Melt 1/4-cup butter in 8-inch square cake pan or 8 inch round cake
pan. Add 2/3-cup brown sugar. Over this arrange pineapple slices to
cover pan. Place a maraschino cherry in the center of each pineapple
slice. Pour cake batter over pineapple slices.Bake for 30 minutes at 325° or until a toothpick inserted into the
center of the cake comes out clean.Cool five minutes, invert on plate.
Oh. Yum. My Great Aunt Marie (my 92 year old grandmother's
sister-in-law) used to make PUDC in a cast iron skillet. I'm not
sure, but I'm doubting she had the maraschino cherries, they were (and
are?) kind of pricey and she didn't have much money. Her PUDC was one
of the best things I've ever tasted in my life. As were her bread and
butter pickles!
