all my previous bikes have been converted to Schrader...
any reason not to?

A narrow light weight rim might not be able to accomodate the larger
hole required for a Shrader valve.

Very true. I do not think that the rims on my Trek 1200 could
handle a Schrader valve. The hole would be getting real close
to the edge of the rim.

IMO they are easier to get good pressure into with a hand pump

I had Presta's on my Trek 750 until I got around to
converting to Schraeder valves when it was time for it's
first set of replacement tires. My wife's 750 had been
converted years ago and I got tired of dealing with two
types of valves. Life is easier with both our bikes
sporting Schraeders. I always found Presta's to be a PITA.
A small increase in hole size did the trick for converting
to Schraeder: the tires are 700-38C. Narrow rims would be a
problem! 🙂

I haven't had my Trek 1200 long enough to really know how
much better the Presta valves handle high pressure. This is
the first bike that I have owned with Presta valves and they
take a little bit of getting used to them.

Well....if you consider that aircraft tires use Schraeder valves, and they
are regularly pressurized to 250 or so. And then you put a couple hundred
thousand pounds of aircraft down on it.

If you want to be a real cyclist then don't think about it,
just do what's right.
Certainly makes letting a few PSI out with just your fingers much
easier before attempting a slippery off-road climb.

Both Presta and Schrader valves work so what do Schraders offer that Prestas do
not? Both types of tubes are similiarly priced. Both are readily available in
almost all sizes though you might have trouble finding a Schrader equipped tube
in a size suitable for 20 mm tires. Neither type is particularly difficult to
inflate.
Given all this the question becomes, what advantages do you think Schraders
offer that make it worth the hassle of drilling out the rims and the attendant
risk of significantly weakening the rims?

Most generic "mini" pumps have a fitting on the business end that can be
unscrewed.
Inside is a reversible collar that can be set one way to accomodate Schrader
valve stems and the other way 'round to inflate a presta-valved tube. I
have used my pump for both and it works just fine...
BTW I have had opportunity to meet someone whose rims were set up for
Schrader vavles and he had "upgraded" to presta!

My Topeak pump does both - "smart head" pump. Works perfectly. It does
seem easier to pump more pressure into prestas than schraeder, though
that's just a feeling, no proofs to offer...

BTTD - bought a tube for my MTB and discovered it had a presta valve.
My MTB pump goes both ways ("not that there's anything wrong with
that"😉 and handles it just fine. My only concern was the "play"
between the Presta stem and the Schrader-size hole; but it hasn't
caused any problems in ~1.5 years of commuting on that tube (knock on
skull).
From internet cycling guru Sheldon Brown: "Presta valves are light,
and don't require as large a hole in the rim. Since the don't use a
spring, they can be easier to pump with a hand pump."

I'm not certain, but I *believe* there are adaptors you can screw on to
the end of the Presta valve that will present the Schrader valve
interface to the pump. (Sorry for the lapse into design patterns
terminology!)
The one thing you must watch out for is the greater fragility of Presta
valves. In particular, if you're pumping one up with a handpump, put
your other hand in back of the valve to brace it. (This goes double
for long-stem Presta valves, which I'm unfortunately stuck with since I
went with CXP-33 rims)
