None and very little.
At 0(105-Ultegra) & 30(Ultegra-7700) gram difference in the freehubs and 25 & 50 g differences for the cassettes:
If you were chasing Lance up L'Alpe d'Huez. It could easily be the deciding factor between you finishing 17'21" behind him or 17'28" behind him! :eek:

You probably wouldn't even notice if you're talking about just changing the RD and that's it. Even if you jumped from 105 straight to Dura-Ace.
Upgrading your cables would probably make a bigger difference in performance.
I have a full DA on my primary bike and 105 on my backup, I ride them interchangably when I train. The place only where I notice it is in the shifters in terms of crispness. That being said I wouldn't spec out a 3k frame with 105, but I wouldn't upgrade a 105 to Ultegra either. Save the cash for tubes, tires and beer.
