    Go here-

    http://bike.shimano.com/services/tech_info_a.asp

Click on each group and then select a derailleur. It will give info on
capacity, etc. (well, for the higher-end groups at least).

Only older versions of Deore XT or Deore will work. Of their current
    crop, use a FD-R443. See:

_ I have an FD-M751 Deore XT that works just fine with a
48-36-24. You might have clearance problems with a 48-38
though. I tried the FD-R443 on this crankset and didn't like
it very much, it eventually self-destructed.
For me the Deore works much better.

    XT?

    XTR FD-M953
    XT FD-M761 & FD-M751
    LX FD-M571
    Deore FD-M511

Using Nexave FD-T401 on one of my bikes, very nice shifting, works better
than any LX or XT that I have tried.

  6. An Ultegra road derailleur works very well - I have the same crank setup as
    you.
