Ultegra; 105 or even Tiagra would be fine.
_ If you want the 27 tooth gear you have to get the ultegra
cassette. The 21-24-27 cluster is the only 27 tooth gear
shimano makes.

_ The cheapest solution for that many cogs is to generally by the
whole cassettes on sale. I'd get an tiagra(HG-50) 14-25 and an
deore (HG-50 or HG-70) 11-32 on sale. The top cogs run about $15-$20 and the individual
flat ones about $10. For the price of two cogs, you can get an
entire HG-50 or HG-70 cassette on sale.
