Assuming it's just tight: It's being used with a quick release, so I
figure I ought to build it a little loose before installing. Is there a

Trial and error. But more likely than being tight your noise is caused by dry
bearings or just plain worn out hub. Get in there and clean, regrease, perhaps
replace bearings and cones. How many miles on this thing?
It's a mystery. This is the beater I found in the attic. At the time
I first fixed it up I didn't have much time and even less money, so for
the bearings all I did was back 'em off, squirt in a bunch of grease,
put 'em back together, and pray a lot. (:
I'm taking it apart now. BTW, if I have to buy some new bearings,
what, exactly, do I ask for when I get to the bike shop? Just "hub
bearings" and however many balls it has?
