It is not possible to convert any STI to another speed...

Odd. I've been lead to believe (by members of this group) that seven and eight were compatible. ie.
an eight speed shifter will work on a seven speed cassette.

I know you need a different freehub to get an eight speed cassete to fit on your wheel, but the
    shifter, no.

May you have the wind at your back. And a really low gear for the hills! Chris

Of course but that wasn't they guy's question, he wanted to know if you could convert a Sora 7s
shifter to 8s, which you cannot..

Nor can you convert any STI to another speed...some are compatible and there are some
'workarounds'(9s shifters and 8s casettes, via spacers, etc) but no lever conversion is possble.

But put that 8s casette on the bike and use a Sora 7s shifter and you will not get all the cogs.
