I have been riding a Dura Ace 11-21 for almost a year. Not signifigant except for the fact that I am located in a very mountainous area. If you want you can do 10000 feet of climb in less than 30 miles.Just switched to a 12-27. Boy what a difference. Have I folded to the pressure? Just wondering what everyone else is pushing. I am guessing 12-23 or 25.😕

I've been riding a similar setup for a long time. My rear cassette combo was always a 12-23, and I rode that all through the "mountains" of Pennsylvania. That setup was good until recenetly, because I'm getting old. :p
As I've gotten older, I've noticed that my cadence is increasing. I think that's mainly because I'm getting weaker, but either way, I seem to be more comfortable at a higher RPM. When I overhauled my bike a few months ago, I switched to a 12-27, like you did. I don't use the 27 often, but it helps knowing it's there. At 186 lbs, I don't have a great power-weight ratio to begin with, so I don't mind the "bail out" gear.
There's no shame in going with a 12-27. Your knees will thank you when you get older.
