Steam young beets until barely tender. Skin and slice ( or
if small leave whole) Place in a casserole and dot with
apricot jam. Cover with a blanket of mint sprigs and dot
with butter. Pour frozen lemonade concentrate over all.

Sweet Jesus! Lord a'mighty! WHY? I just finished taking 13
jars of apricot jam from the boiling water bath and you can
be damn sure none will ever get intimate -- nay, not even
neighborly -- with a beet in my house. (There ARE no beets
in my house. <That's clarification for the wordsmith cop,
zxcvbob>😉 I must say it sounds pretty disgusting. Did you
spend a LOT of time looking for that abomination, Wayne?
Heck, if you did, c'mon over and make yourself useful
    scrubbing my kitchen floor! JAY-zuzz!

I wuzn't gonna say anything; I'm still in shock from reading
the recipe. Frozen lemonade concentrate? How much? That
stuff is strong! (Maybe an attempt to hide the beets.)

Now ya know, I was just funnin' ya. <G> As much as I love
pickled beets and pickled beet relish, I don't think I've
ever read such a disgusting recipe involving beets. I doubt
I could have made up one worse than this if I'd tried.

I whip up a batch of my famous "Can't Be Beet Jelly" just
for Bubba Vic. If I can stand the stench of boiled dirt
    in my house.

Much as I love pickled beets, I would leave the house when
my mother was cooking the beets. Couldn't stand that smell.
