I make many of my own sauces and stocks ahead, and freeze in small portions. But I have never thought about freezing the classic New Orleans roux. There's three levels / colors of it, and some take a long time and attention to prepare properly. It would be great if I could make baatches ahead of time, to be frozen and ready ont he spot to use in impulse cooking.
Has anybody tried freezing it? I'm not sure because of the flour and oil content.

I'm not sure because of || the flour and oil content. || I have no idea what a New Orleans Roux is, but a 'normal' flour / butter roux freezes fine, although care needs to be taken when reheating as it may separate.
