  1. What are the different categories for rides / riders (cat 1,
cat 5, etc...)? I thought I know what they were for certain
rides, but I don't know what they mean when they're applied
to riders. Also, I got my first pair of clipless shoes
yesterday (Shimano SH-M038), and they came with a plate to
screw the cleats into. Should I use that one, or the plate
    that came with my cleats?

    Thanks,

    Adam

Those sound like categories used in US amateur racing.
Beginner racers start at category 5. If your results are
good enough, you move up to category 4, etc.

The ones that came with the shoe may fit the shoe better.
    Try that one first.
