Last week I had the best clam I've ever had. They were
simply sauteed in olive oil until they opened, Then the
upper shell was removed and the shell bowls with the meat in
them was put back on the pan (lower heat), with a good
sherry splashed over them multiple times (making sure the
pan didn't dry out). Done when tender. Take them off and
pour the "sauce" from the pan over them. Very simple and
very yummy.
