Memorial Day grilling

  1. Who grilled for Memorial Day?

    We grilled hamburgers, beer can chicken, and corn on the
    cob. Everything tasted great. I also made a mango,
    strawberry, and mint salad. We ate the hamburgers today and
    we'll keep the chicken to pick on for a few days.

    I roasted a pork shoulder and am slow cooking a rack of
    baby back ribs in the crock pot; the ribs should be done
    by midnight.

    I grilled burgers. Toasted the buns on the grill. Slice of
    red onion on mine. Accompanied by German Potato Salad for
    Rob and "regular" potato salad for me. And milk.

    <raises hand> Shrimp and mushroom kebabs and grilled smoked
    sausage. The usual corn on the cob and a simple salad made
    with baby bok choy, vine tomatoes and some grated carrot
    with Ranch Dressing.

    Hamburgers, pork ribs - baked and then finished on the
    grill, accompanied by Greek salad and lots of potato salad.

    Two pork butts for pulled pork, 2 yard birds, 20 # of
    grilled chickie wings, 2 onion pies (yes, cooked out in the
    grill) two dozen ears of corn...what else???

    Saturday - Grilled New York Steak with a mock Bordeaux sauce
    - Green salad - corn on the cob- Potato Salad - root beer
    floats. Sunday - Oak smoked spare ribs cut to a Saint Louis
    style - snappy coleslaw (vinegar & oil based) - baked
    potatoes - Fresh strawberries and blueberries for dessert.
    Monday - Santa Maria Style Tri-Tip (red oak grilled) - more
    of the slaw (still much better 2nd day) Balsamic and Garlic
    fresh Spinach, Cubed baked potatoes re-fried with red onion
    and green bell pepper. More fruit and ice cream.

    I grilled marinated New York strip steaks on the grill while
    simultaneously grilling Brats in the rack hanging from the
    grill lid over the steaks! I find it easier to cook the
    Brats to a nice golden brown doneness without burning them
    by using the rack mounted in the
    lid.

    We grilled portobello mushrooms, red peppers, red onions,
    and zucchini. The veggies had been tossed in olive oil and
    sprinkled w/ balsamic vinegar (except for the zuke...I put
    OO, fresh lemon juice, and fresh rosemary on that. I had an
    eggplant, but forgot to cut it up. We grilled some boneless
    chicken breasts which had been brined and marinaded in OO
    and lemon juice w/ garlic.

    We served all this with a huge garlic-herb foccacia I'd
    baked that morning (the baby woke up at 4 a.m. and didn't go
    back to sleep, so that gave me plenty of time to bake!). I
    also made some pesto mayonnaise and aioli. The veggies made
    great sandwiches on the foccacia. Messy, but wonderful, even
    w/o the eggplant and the feta cheese, which I also forgot.

    Seven-layer salad on the side, plus cut-up fruit. Chocolate
    cake and pumpkin choc-chip cake for dessert.

    I made about 20 lbs. of potato salad for several cookouts.
    I am definitely "potato salad - ed out" until at *least*
    July 4th.....

    It's not as bad as my friend who made a big bunch of cole
    slaw from scratch. She used a manual grater for the cabbage
    and I said "Geez, why didn't you ask me to lend you my food
    processor...lol!"....

    That's all of the ingredients! I chopped up one mango and
    about a cup of strawberries. I tossed the fruit with a
    little bit of sugar (okay, one more ingredient) and the
    leaves from a tiny sprig of mint. Let it sit so the juice
    comes out of the fruit. I can't really claim invention of
    the concept of tossing together fruit, but I had never had
    this combination before. I had a mango; I had some
    strawberries; mint is growing in the garden. I got inspired
    and threw it all together.

    We had absolutely nothing unusual, but everything was good.
    On Sunday we grilled filets for some and ribeyes for others,
    huge roasted yams and corn on the cob, homemade chocolate
    chip cookies and fresh rhubarb pie.

    On Monday we grilled franks and hot sausages. I made potato
    salad and coleslaw, and we had more corn on the cob. We
    finished off with fresh peach ice cream.
