Phylloquinone aka vitamin K1 is hydrogenated along with the unsaturated double bonds in the fatty acids. The result is dihydrophylloquinone.
A randomized crossover study using 15 young adults were placed on restricted K-1 intake for a week and then provided with either phylloquinone or dihydrophylloquinone at 200 micrograms per day.
The hydrogenate form was found not to have any detectable biological effects on bone formation and resorption. Whereas, natural form of K1 was found to improve bone formation when the subjects were provide with the repletion doses of that form.

For some persons vegetable oil is an important source of vitamin K.
In other words, hydrogenation destroys vitamin K activity of vitamin K in vegetable oil.
