I ride a mountain, on the streets and bike paths where, i live, my question is about the sprockets, and gears, on the crank, you have the 3 different sprockets, small, med, large, and then you have the 7 sprockets on the real wheel, which sprocket on the crank, and which sprocket on the real wheel would be the best combination for speed on a flat and level course?

Use bigger sprokets on the rear if you can't pedal the smallest one.
