As I recall, I could use certain types of gelatin. I do not
recall protein as such being prohibited. And get the best
advice you can from your diabetes doctor on how to adjust
your medications; if you go with the purely liquid diet and
no quick preparations, you might want to have a "trial run"
with no commitments.
