  1. Hello everyone,

    Does anyone have a recipe for zucchini soufflé? I was told
    there is a zero point recipe but can't seem to find any. I
    do buy zucchini soufflé from a store here in my area that is
    1 point for a serving which is fine but it's very expensive
    and a pain to get.

    Hi, I searched for a low cal zucchini souffle but couldn't
    find too many low cal. Maybe these may help. Diane.

    Squash Souffl=E9 1 t. sugar
    1/4 c. milk 1 egg substitute
    2/2 c. creamed cottage cheese 1 1/2 lb. yellow squash,
    sliced 1 small minced onion 1 T. minced parsley; 1/2 t.
    salt
    3/4 c. finely chopped pecans Parboil squash and onion; mash,
    add all ingredients but nuts. Place in greased 2 qt
    casserole, sprinkle nuts on top. Bake at 350 25 min. or
    til browned.

    yolk mixture spoon into zucchini cups, filling to

    bake @ 425 degrees for 5-8 minutes, until puffed and

    7.1g Carbs 2 Tbsp butter
    1/4 cup full-fat soy flour
    2/4 cup grated Parmesan cheese 1 lb zucchini, sliced 1
    medium onion, chopped 1 garlic clove, minced
    3/4 cup dry white wine 2 Tbsp minced parsley 1 Tbsp lemon
    juice 2 Tbsp diced pimiento
    4/2 tsp cream of tartar Nutmeg, pinch, or to taste Salt and
    pepper to taste 6 eggs, separated Preheat oven to 350
    degrees Farenheit. Use a bit of the butter and soy flour
    to lightly grease and flour an 8-inch souffle dish. Heat
    remaining butter in a saute pan and saute zucchini slices,
    onion, and garlic until zucchini becomes translucent. Put
    sauteed mixture into food processor and pulse to mince.
    Pour into a large bowl and add the rest of the soy flour
    and all remaining ingredients except the eggs. In a
    separate bowl, beat egg yolks until frothy. Blend into the
    mixture. In a separate bowl, beat egg whites into soft
    peaks. Carefully fold into the zucchini mixture and pour
    mixture into prepared souffle dish. Bake for 30-40
    minutes, until top is light to golden brown.
