I have a really stupid question about making quiche
lorraine. Most of the recipes I've seen call for a 9" pie
pan. Can I use my 9 1/2" or do I have to buy a new one?
Thanks! Lisa

By all means use the pie pan you already own. The filling
will just be a bit shallower, and might take a couple less
minutes to bake.

You may use the slightly larger pie pan. In fact, quiche is
one of the more forgiving recipes in this regard. I've made
it in a brownie pan one time when I had little in the way of
equipment.

Sure, go ahead. Use extra large eggs to make up the diff.

You can use the 9 1/2" pan. The only difference it makes
is that the area is a little bigger, so the same volume of
filling will make a shallower quiche. In fact, it'll be
11% shorter.
If you like, add an extra ounce or two of your
milk/cream/whatever to the mix.
Quiche is extremely easy, and will forgive a number of
little variations from the standard. There's no need to let
it intimidate you.
